Easy Brussels Sprouts Stir Fry Recipe

I enjoy cooking (and eating!) a lot and I wanted to share some of my favorite recipes. Nothing fancy, but simple, quick and tasty vegetarian recipes.

Brussels sprouts...I can't remember wether or not I liked them as a kid, but I can tell you I love them as an grown up. Ever since I heard somebody stir fried them I make them on a regular basis. A quick and tasty stir fry with simple ingredients. 

- Brussels sprouts cleaned and halved 

- Peanuts whole and / or crushed

- Garlic clove, thinly sliced

- Red chili or chili flakes

- A splash of soy sauce

- Water or vegetable stock

Stir fry the Brussels sprouts for about 3-4 minutes or until they start to show caramelized spots. Add a couple of table spoons of water or stock to create steam to further cook the sprouts to make them a more tender. Add more water if it evaporates before they are as tender as you would like them. Add the peanuts, the garlic and the chili toss regularly for 2 minutes. Add a splash of soy sauce at the end toss and serve with rice.
